Carversteak

Carversteak is Vegas's largest luxury steakhouse — 14,000 sq ft at Resorts World, LV Weekly's 2025 Best Steakhouse, with Flannery dry-aged beef, a $325 Wagyu tomahawk, and a kitchen open to midnight.

Is Carversteak Worth It? Honest Review & What to Order

Carversteak is the city's largest luxury steakhouse — 14,000 square feet at Resorts World from independent operator Carver Road Hospitality, and the reigning Best Steakhouse in Las Vegas Weekly's 2025 readers' poll. The register is modern-social rather than old-guard: a martini cart works the room, tableside cocktails smoke, a Strip-view terrace runs its own energy, and the kitchen stays open to midnight — rare air for fine dining.

Chef Daniel Ontiveros' menu (refreshed May 2026) spans Flannery dry-aged cuts — the 18oz Kansas City strip at $92 — through a $325 50oz Westholme Wagyu tomahawk, with a raw bar and seafood program (black cod $49, Chilean sea bass $62) that reviewers consistently rank above the beef. Playful signatures like Wagyu cheesesteak bites and caviar poppers set the tone; the flaming 'baked Nevada' ends it. Prix fixe from $99; a la carte lands $150-200 a head.

Fit check: the room runs loud and party-forward — wrong for a hushed anniversary, right for a group that wants steak with a pulse — and Resorts World's north-central address isn't walkable from mid-Strip. The terrace is the pro move: Strip views, calmer decibels, same menu.

Insider tip Book the terrace — Strip views and half the main room's volume — and don't sleep on the raw bar and seafood: reviewers rate the black cod and sea bass above the steaks. After a late show, this is the fine-dining kitchen still firing at 11:30pm.

Frequently asked questions

What should I order?

Start with the Wagyu cheesesteak bites and caviar poppers, then the 18oz Flannery dry-aged Kansas City strip ($92) — or trust the seafood side (black cod $49, Chilean sea bass $62), which quietly outperforms. The flaming baked Nevada closes it.

How much does dinner cost?

The prix fixe starts at $99 per person (+$24 for the bone-in ribeye upgrade); a la carte runs $150-200 with a drink, and the $325 50oz Wagyu tomahawk exists for tables with something to prove.

When is it open?

Daily 5pm to midnight — the latest-serving luxury steakhouse on the Strip corridor, which makes it the default post-show splurge.

Is it loud?

Yes — deliberately: high energy, big room, roaming carts. The terrace is the calmer option; a quiet corner booth this is not.

Do I need a reservation?

One to two weeks ahead for weekend prime times (OpenTable/Resy); the expansive bar and terrace lounge absorb walk-ins on most nights.
