The $185 tasting menu (vegetarian $155, pairing +$115) is the room's spine.
A 2026 footnote worth knowing: the restaurant went dark from mid-April to the end of May while Grant Achatz's Alinea staged its sold-out anniversary residency in the space — a compliment disguised as a closure — and reopened on schedule; stale 'temporarily closed' captions on review sites are echoes of that. Current service runs Tuesday-Saturday 5-9:30, dark Sunday-Monday.
The register is old-school in the best and most literal senses: business casual enforced, formal pacing, the Maine lobster pot pie (~$145) carved tableside, caviar tiers climbing toward $725. Plan $150-250 a head. Against the Strip's newer spectacle rooms it reads classical — which, for the anniversary-dinner constituency, is precisely the assignment.
