Prime is Jean-Georges Vongerichten's steakhouse at Bellagio, holding the same jewel-box room since the resort opened in 1998 — velvet banquettes, chandeliers, 1940s supper-club bones — and holding something rarer: a terrace directly over the Fountains, where every fifteen-minute show is dinner theater with your name on it.

The cooking layers Jean-Georges signatures over the steakhouse spine: the soy-and-chocolate-glazed short rib is the house classic, the cheese soufflé and tuna tartare carry his fingerprints, and the beef runs from a ~$70 NY strip through A5 Japanese cuts from $125. It's on The Infatuation's 2026 best-steakhouse list — not bad for the second-oldest room in the conversation.

The terrace math is the thing to know: fountain-side tables carry roughly a $175-per-person minimum, book out fastest, and demand explicit requesting at reservation time (two-to-three weeks out for weekends). The dress code is genuinely enforced — collared shirts minimum, jackets recommended — and the formality reads romantic or stiff depending entirely on what you came for. Plan $150-250 a head.
