Cipriani brings the Harry's Bar bloodline — the Venice institution that invented both the Bellini and beef carpaccio — to a street-facing room at Wynn Plaza. The formula hasn't changed in ninety years: white-jacketed servers, Venetian classics executed without flourish, and the quiet confidence of a house that knows you came for the original.
Order accordingly: the carpaccio alla Cipriani ($36) and a Bellini are historical documents, the baked tagliolini with ham ($38) is the sleeper, and the mains run $42 to the $220 whole branzino for four. It serves lunch AND dinner daily (11:30am to 11pm) — rare for this tier — which makes a Cipriani lunch one of the Strip's more civilized midday moves. A Japanese 'Yotto' menu section joined recently for the omakase-curious.
The old-world manners come with old-world rules: business casual enforced, elegant expected, no children under five, and prices that treat simplicity as a luxury good — $38 risottos add up faster than they read.
