Mizumi

Mizumi is Wynn's Japanese fine-dining jewel box — a Forbes Four-Star room (renewed for 2026) opening onto a private garden with koi ponds and twin 90-foot waterfalls, under exec chef Jeff Okada Ramsey, whose résumé runs through Tokyo's Michelin-starred Tapas Molecular Bar. Fish arrives daily from Japan; the formats span sushi and omakase, robatayaki over white binchotan, kaiseki-leaning tastings, and a separate Teppan Room.

The experiences ladder up: the sake-pairing omakase is the Forbes-praised signature; caviar service reaches $170; and the ultimate seat is Sansui — four tables on the waterfall terrace carrying a $175-per-person food-and-beverage minimum, by request only (three patio tables sit minimum-free for the quick-witted). The Teppan Room books separately from the main dining room.

House rules run precise: reservations hold fifteen minutes past their time, children under five stay home, and the dress code reads 'upscale casual chic.' Plan $150-250 a head. Dinner nightly 5-10 (10:30 weekends) — and if the budget allows one theatrical seat in the building, the waterfall pays it back at dusk.
