Sartiano's Italian Steakhouse

Sartiano's is Wynn's biggest 2026 dining swing: Scott Sartiano's Italian steakhouse opened March 4 in the long-dormant Country Club space overlooking the Wynn Golf Club, with three-time James Beard winner Alfred Portale directing the kitchen and the New York Zero Bond members' club operating next door. About 140 seats, terrace included, and the only Wynn restaurant with its own direct exterior valet.

The menu splits its Italian and steakhouse ambitions without shortchanging either: a tallow-aged porterhouse carved tableside and a 40-ounce bistecca alla Fiorentina on the beef side; Maine lobster bucatini with Calabrian chili butter and Portale-pedigree pastas on the other; and the golden Osetra caviar cannoli as the appetizer that made the early reviews. Expect $150-300-plus a head — this prices at the top of the Wynn stack.

Early-months honesty: the kitchen and service are still finding cruise altitude per the first reviews, the Zero Bond adjacency brings a scene-heavy (and occasionally loud) crowd, and it's dinner-only at launch. But golf-course views at sunset from a Wynn terrace are a genuine rarity, and the pedigree here — Portale in the kitchen, Sartiano's New York track record — suggests the settling will be quick.
