Bavette's is Chicago's Hogsalt group doing what it does better than anyone: a dark, chandeliered, red-leather supper club hidden inside Park MGM, where the jazz plays low, the murals reward staring, and the steakhouse canon gets a French accent. It's routinely the answer to 'where do restaurant people eat steak in Vegas.'
The menu runs Chicago-serious: the 16oz Chicago-cut ribeye at $78, dry-aged bone-in cuts topping $105, a 32oz porterhouse at $156, and the sleeper $39 double-Wagyu cheeseburger that quietly embarrasses most burger menus in the city. Seafood towers ($180-295) and a la carte sides push the check — plan $130-180 a head — and dinner runs nightly from 4:30pm.
The operating manual: weekend tables book two-to-four weeks out and cap at twelve guests, but the back bar seats walk-ins with the FULL menu — the single best steakhouse hack on the Strip. The center of the room gets loud when full; the perimeter booths are where the supper-club fantasy actually lives.
