Cantina Contramar is the first US expansion of Mexico City's most beloved seafood house — Gabriela Cámara's Contramar, feeding the capital since 1998 — opened at Fontainebleau on March 28, 2026 in a soaring Frida Escobedo-designed room, with the bar program shaped by Casa Dragones co-founder Bertha González Nieves. The Review-Journal called it one of the most important openings of the year; the early reviews agreed.
The icons made the trip intact: the tuna tostada — chipotle mayo, crispy leeks, $21 — that launched a thousand imitations, and the pescado a la talla ($155), a whole butterflied snapper painted half red adobo, half parsley, grilled and shared. Around them: wagyu gaonera tacos ($38), a caviar-crowned sope at $62, and a dry-aged tomahawk at $225 — pricing that runs full $$$$ despite the 'cantina' name.
