The premise is la cucina Romana done with fundamentalist care: hand-rolled pastas, Roman pizzas, and the sfincione focaccia that should open every table.
The pastas are the argument — cacio e pepe, carbonara, and vongole all at $35, made by hands that built one of LA's most famous pasta programs — with secondi ($78-94) as the supporting act rather than the point. Dinner runs nightly from 5pm (4pm Friday-Saturday), and demand tracks the Fontainebleau event calendar: book a week or two out normally, further when a residency is in the building. Smart casual passes fine — useful pre-show.
The honest ledger: portions read modest against the prices, the room runs loud and tightly packed, and the far-north-Strip address is a genuine ride from center Strip.
