Petrossian Bar is the Bellagio lobby's resident aristocrat — a caviar and champagne lounge parked beside the front desk, directly beneath Dale Chihuly's two thousand glass flowers, with live piano carrying the evenings. It has survived every renovation cycle intact and remains the resort's most civilized twenty minutes.

The caviar service is the genuine article — Imperial Ossetra, Royal Daurenki, and Baika tiers, with a trio flight pairing thirty grams against Veuve Clicquot pours or a vodka flight — and the kitchen has fun at the margins: caviar tacos, cones, even donuts. The Bellagio Martini arrives crowned with a tiny caviar cone; cocktails run $20-28. English afternoon tea holds its Friday-Sunday 1-4pm slot, a Vegas anachronism worth protecting.

Costs and context: caviar service climbs into the hundreds, the room is open to the lobby's full foot traffic — this is people-watching as amenity, not privacy — and Conservatory crowds wash through at bloom changes. The piano makes the room after dark. As a pre-fountain or post-show stop, it has no real competitor on the Strip's luxury end.
